Sous-Chef Job Description

A Sous-Chef is the second-in-command in a professional kitchen and assists the Head Chef in managing daily kitchen operations. They supervise kitchen staff, coordinate food preparation, ensure meals are prepared according to recipes and quality standards, and maintain efficient workflow during service. Sous-Chefs help plan menus, monitor food inventory, order supplies, and ensure compliance with food safety, sanitation, and health regulations. They also train and mentor junior kitchen staff, oversee portion control, minimize food waste, and step in to manage the kitchen when the Head Chef is absent. Their role is essential in maintaining high food quality, excellent kitchen organization, and outstanding customer satisfaction.

Main Responsibilities:

  • Assist the Head Chef in managing daily kitchen operations.
  • Supervise and coordinate the work of kitchen staff.
  • Prepare and oversee the cooking and presentation of meals.
  • Monitor food quality, portion sizes, and kitchen efficiency.
  • Assist with menu planning and inventory management.
  • Order food supplies and control kitchen costs.
  • Ensure compliance with food safety, sanitation, and workplace regulations.
  • Train and support junior chefs and kitchen employees.

Important Skills:
A successful Sous-Chef should have excellent culinary and food preparation skills, strong leadership and team management abilities, creativity, attention to detail, time management, organizational skills, problem-solving abilities, and the ability to work effectively under pressure. Knowledge of food safety regulations, inventory control, communication skills, and a commitment to delivering high-quality cuisine are also essential for success in this role.

Tasks

  • Supervise activities of specialist chefs, chefs, cooks and other kitchen workers
  • Create new recipes
  • Instruct cooks in preparation, cooking, garnishing and presentation of food
  • Prepare and cook complete meals and specialty foods for events such as banquets
  • Supervise cooks and other kitchen staff
  • Prepare and cook food on a regular basis, or for special guests or functions
  • Prepare and cook meals or specialty foods
  • Requisition food and kitchen supplies
  • Arrange for equipment purchases and repairs
  • Plan menus and ensure food meets quality standards
  • Prepare dishes for customers with food allergies or intolerances
  • Supervise activities of sous-chefs, specialist chefs, chefs and cooks
  • Train staff in preparation, cooking and handling of food
  • Leading/instructing individuals
